{a slice of heaven, taken last week}
I wanted to share with all of you one of our favorite dishes to eat around here. Since Cedar has become an increasingly picky eater when it comes to vegetables, I am always trying to find ways to sneak them in. One of those ways is in this roasted veggie Crustless Quiche I found online. Although we call it a frittata. ; )
When we are trying to not eat that much dairy, we use Daiya cheddar cheese in place of real cheese. It still tastes so wonderful.
The veggie combo I have found to be the favorite around here are roasted onions, broccoli, cauliflower and sweet potatoes. If we are eating meat or needing more protein, I sometimes put in bits of real bacon or sausage.
For an extra special treat, sometimes I will layer the bottom with already cooked hash brown potatoes that we whip up. Mmmmm…
My boys devour this. Its mouth watering yum.
If any of you have some other fun ideas on sneaking in veggies besides smoothies and making baked potatoes out of steamed cauliflower, it would be a delight to hear for us and probably many that come to this space.

Looks delish! I’ve been obsessed with making quinoa and cheese. I take it to work with me everyday for lunch. I’m sure you could sub daiya cheese for the cheddar. I like to put minced pieces of kale or chard, and grated carrot or zucchini into anything I can from spaghetti sauce and taco meat to my crockpot baked beans, soups, and lentil pie. I go liquid too by freezing all of my vegetable scraps and throwing them into a covered stockpot every Monday to make a huge batch of broth. Every night before bed I start herbal infusions that are high in vitamins and minerals. Sprouting your rice, lentils, beans, etc is another great way. Pureed soups are such a good way too, you get all the creamy of dairy, without any dairy and you could use any veggies you want from fresh peas to roasted root vegetables or tomatoes. It’s such a yummy thing to come home to on a chill night and makes great leftovers for lunch or freezes well.

My girls and I are recently eating a lot of potato pancakes. I grate a potato or two, a large carrot, sometimes a sweet potato, and mince an onion. I squeeze the extra water out of the potato, too. I add at least one beaten egg (two if I’ve used more than one potato) and a little sprinkle of potato or arrowroot starch or chickpea flour (we’re gluten-free: if we weren’t I would just use all-purpose flour). I season with salt and pepper, sometimes even add a little dash of dijon and mix well. I drop it into a hot pan with a tsp or two of olive oil and spread it out with a fork and press it flat. When it’s crispy and brown on the bottom I flip it, either all of a piece or in quarters.
It’s a great way to hide other vegetables, too. Shredded zucchini, cauliflower…you could even sneak squash into this. And we’re pretty liberal with the ketchup, too. I’ve learned to pick my battles with my incredibly picky eater.

Zucchini Brownies! Once you mix the batter & bake them, you don’t know that there was zucchini it them. You just end up with a very moist, tasty brownie.

From Jessica…I’ve learned to use my hand blender and blender a bunch in cooking. I have a picky eater in my home…For example I make my homemade pasta sauce with fresh onions, garlic, basil, oregano, crushed tomatoes and I let it cool…Then I blend it up in the blender so that you get the taste of the homemade pasta without all the texture. It works great!

My 15 year old stepdaughter is fussy about her veggies too so I am always looking for ways to introduce them to her in a way she’ll eat. [Some times I think there isn't much difference between toddlers and teenagers.] I’ve discovered one of the best ways is to combine veggies with one [or both] of her two favourite foods – chicken and cheese. May be you could try that with Cedar?
For example, one of the most popular meals in our house is wraps. We love chicken with satay or chilli sauce, grated cheese and salad veggies such as lettuce, capsicum, tomatoes and cucumber. My stepdaughter has no problem eating those veggies. I also make good use of pesto, which she also loves. Pesto mixed with pasta and some diced bacon and raw baby spinach, makes a quick and delicious meal.

Kale chips! I am always amazed that my kids eat them like they would regular chips – that is, with abandon. Some other favorites are lemon broiled green beans (fresh or frozen both work great), sweet potato fries, frozen peas added to buttery pasta. Also, if you find a good whole-food ranch recipe that you like, you might be surprised how many veggie sticks (carrots, celery, cucumber) disappear.

Have you considered making personalized pizza’s? You can make the pizza sauce and add butternut squash, peas, spinach and anything else you want to add into the sauce if you puree it first and let him go to town on what he wants on top! Our kids have only recently come to love veggies- its been like an overnight awakening- one day they both just started eating the sliced up veg I put out before dinner! Prior to that and still today I make veggie heavy soups and chillies- lentil soup & veggie chilli are family favourites. Also pumpkin loaf, shredded zucchini in banana muffins as well as the usual kale smoothies.
